After talking about potential vacation destinations for several months, my spouse and I decided we needed to get away from the Texas heat and find somewhere cold. We were sick of visiting the beach and relaxing there all the time. I understand that some of you may think we’re crazy, but we’ve been visiting the Caribbean for eight years! We were eager to leave and begin discovering the wonders of our wonderful nation. Did I mention that we were melting and it was 100 degrees in Texas? We chose Colorado after doing some study. At the last minute, my cousins joined us, and my sister-in-law and brother-in-law arrived. If, like me, you’ve been living under a rock and haven’t visited Colorado in the summer, GO! This is the reason you won’t be let down.
We were upgraded to FIRST CLASS at the beginning of our vacation. Since I had never taken a first-class flight—which is where all the celebrities sit, right?—I was ecstatic. Large, comfortable seats, free drinks, and a hot towel to clean our hands were provided when we arrived. Was there a free mimosa mentioned? When United Airlines provided two breakfast options for our flight, I went with the steel cut oats and fruit. My husband, Justin, ate the eggs, and they were both excellent.

We gathered the family and our belongings when we got to Denver. On the advice of my sister-in-law’s acquaintance, we made a stop and dined at Lucile’s Creole Café. Oh my goodness, it was delicious. We had beignets, eggs, omlets, sausages, cornbread, and Bloody Marys that were to die for, but I was too busy stuffing my face to take any photos.
Having fallen into a food coma, we went to Avon and stayed at the Beaver Creek Ski Resort’s Ritz-Carlton Bachelor Gulch condo. Additionally, they offer a stunning hotel with a ton of features to make your stay truly amazing. Even though we didn’t have children, we noticed that they had a kids’ camp where adults could go hiking, spa treatments, fly fishing, golfing, and other activities. We made the decision to hike seven miles to Beaver Lake on our first day there. For those like us who are coming from flat areas, this climb is tough for the weak of heart! Nevertheless, it is stunning.

Here are a few snipits from our hike:
We sucked wind hiking up almost 10k feet
Stopped a million times to look around at the beauty and splendor of our Earth
Found amazing Alice In Wonderland Mushrooms
Saw the cutest chipmunks and three Elk
Warning-Pictures Galore

This is my absolute favorite picture of Beaver Creek Lake. After the light rain the sun came through the clouds and it was amazingly peaceful, still, quiet and simply calm.
